Tuna Tartare with Spicy Tomato Jelly, Avocado Mousse and Puffed Wild Rice. 


Brandon opened the red team's progression with a tuna tartare he had planned from the start of the challenge, noting that the mild peppers he wanted to use - Fresno and red jalapeno - made it appropriate to lead. He built a spicy tomato jelly as the top layer, made a smooth avocado mousse as a base, and finished with puffed wild rice for crunch. 


During team tasting, Brandon's course was flagged as milder than Sieger's green team opener, prompting a discussion about whether the red team's progression started too low. Brandon was confident the dish was well executed regardless: what's really important to me is I set the first course and make sure that the seasoning is spot on.

{Judge}: Brandon's fish, the texture in the tomato jelly and the tuna, that was just an amazing play in my mouth. I felt like I was having fun. I think it was the perfect amount of heat. Compared to the green team opener: So if this is one, we just need to make sure the red team is going up from there.
