Joe describes: 'Got a spider crab tartlet with apple radish, a little bit of nori powder, a crab milk mousse, which is aerated in the ISI.' He explains his approach: 'Classic combos we always do at the restaurant based around spider crab. I'm trying to really not take anything away from that spider crab.' Joe brings his 'distinctive Asian fusion style to the competition' and states: 'I think I've got four great dishes and four great themes. I want to smash it for the Southwest.' When meeting Amber, he acknowledges: 'First time ever.' Joe recognizes Michael Caines is 'an absolute veteran, isn't he? Any small mistakes could be picked up on.'

Michael Caines ranked Joe fourth (last): 'Very close, but I'm gonna go with Joe. There's an element that was not quite executed correctly. It was very simple, and actually, I'm looking for something a bit more than that.' Nicholas comments: 'Really nice flavor. There's a crab coming through.' Amber: 'That spider crab is just delicious.'
