Tom made a spring and summer citrus layer cake, playing to his strength in sponge cakes.
Tom: "Cake. I might as well play to my strength and just try and pull it out and do a good job."
Tom: "So I'm making a spring summer citrus cake."
{Alison}: "Do you prefer this, where you can choose your own recipe?"
Tom: "It would just be nice to try one with a recipe."
Tom: "I'm going to give them 25 minutes in the oven and then I'm going to have a look at them."
{Tom}: "How long have we got?"

Paul: "Yeah, this looks great. Very retro. It's a little bit too dark, but I like the decoration. The sponge isn't too bad to eat, but it is overbaked."
Nigella: "I felt a bitterness, which makes me feel that there's some zest with a bit too much pith in it."
Paul: "In the cake. But there's a real attempt there."
