[Technical challenge: mystery box, no recipe, two hours, judged blind. Finished 1st] Gabe made a St Clement's (lemon and orange) curd tart topped with piped, blowtorched Italian meringue, written from memory with no method. Gabe: "I'm taking, like, a St Clement's meringue." {Noel}: "Let's have a look at your recipe. Three eggs, juice, zest. Where's the method?" Gabe: "What method? This is just madness." Gabe: "That looks like pastry." Gabe: "I actually feel like I've turned a corner." Gabe: "That looks like cooked pastry. I'm just going to waft." Gabe: "I'm making Italian meringue. I know it's, like, awkward and challenging, but they've asked for ambition, so that's what we're gonna do." Gabe: "Now to pipe. I'll get it on and blowtorch." Gabe: "It's done." Gabe: "I really feel like I pulled that out of, like, the recesses of my head, for it to go so well. It just feels unreal."
[Blind judging] Paul: "Lemon and orange meringue tart. I quite like the decoration on the top. Yes, it's holding nicely." Nigella: "Yes, it is. It is slightly overbaked, but it tastes wonderful when you eat it. It still has that melting butteriness. I love the sharpness of the curd." Paul: "The meringue is set well. I do get that blend of orange and lemon. I think it's done a great job." Nigella (announcing 1st place): "Lots of pizzazz, lots of zing, and really beautifully balanced." Judges' ranking: 1st.
