Stacey's Camembert Bedfordshire Clanger

Stacey: "I'm going for Camembert, rocket, pine nuts and caramelized onions. It's kind of a posh take on the cheese and pickle."
Voice-Over: "Stacey's the only baker using a wet filling in her clangers. Her cinnamon custard will surround the fresh blueberries and apple of her sweet."
Judge: "How are you containing that little river of custard?"
Stacey: "Well, this particular custard is quite thick when it's inside."
Prue Leith: "There's been a little blueberry explosion, so we know which end is sweet."
Paul Hollywood: "I think you've got a great texture there. The pastry is nice and flaky. It's a little bit soft, as I'd expect from a suet crust."
Paul Hollywood: "That's lovely, the pastry's flaky, it's light, it's got lots of flavour, it's got a nice crisp on the outside and it's baked all the way through. The caramelized onions are the heroes in there. Beautiful flavors."
Prue Leith: "I'm amazed that you got such good texture, because the blueberries were raw and I rather expected them to sog up the bottom of the pastry, but they haven't."
Paul Hollywood: "That is absolutely delicious."
