Steamed Clams, Preserved King Oyster Mushrooms and Baby Bok Choy with Tomato and Maple Syrup Nage.


Team: "We have a steamed clam with preserved king oyster mushroom, pickled and fried baby bok choy, and a tomato clam nage.". 


Kristen Kish: "How did you incorporate the maple syrup?" 


Green team: "The nage on the bottom is caramelized tomatoes, maple syrup, red wine vinegar, and lots of butter."


Judges: "Green team. I found that your dish really highlighted every single ingredient. You could pick them apart, yet they all still went together. You had to use maple syrup, and it was just enough to taste it, but not enough to make it sweet."
