Shuai: "I ended up with a steamed Atlantic cod with a braised daikon snow crab egg drop sauce. I'm going to start picking through the crab. I was just really inspired by the connection to the Caribbean."
Judges: "The cod is so beautifully cooked, and the crab is so complimentary. The braised daikon paired perfectly with the cod. Altogether, it was a really cohesive dish. I really liked it. It also shows you that all texture doesn't have to be crunch."
