A pediatric doctor living in London who grew up in Austria, Yannis made a take on the Sachertorte using a non-alcoholic stout. Layers of stout sponge are sandwiched with apricot compote, covered in shiny chocolate ganache and served with vanilla creme diplomat in place of traditional Austrian whipped cream (Schlagobers). {Yannis}: "I am using a non-alcoholic stout. I grew up in Austria, so I am making an Austrian cake. It's called the Sachertorte. It's the best chocolate cake in the world." {Yannis}: "This is the chocolate ganache. I need it to be nice and glossy. The Austrians are going to hate me if I can't get this right." {Yannis}: "In between will be the apricot compote." {Yannis}: "We are going to pour ganache on the top." {Yannis}: "This is the diplomat cream."
{Paul Hollywood}: "I think it looks amazing." {Nigella Lawson}: "Looks like the cake's been in prison, doesn't it?" {Paul Hollywood}: "Your sponge is beautiful. The creme diplomat is nice and light." {Paul Hollywood}: "A little bit more apricot inside would have been nice." {Nigella Lawson}: "Yes, I agree. I love the apricot. You want it almost rippled through."
