Strawberries and Cream Vol-au-Vents
Classic strawberries and cream vol-au-vents with fresh strawberries covered in summer fruit liqueur glaze. Originally planned to use crème pât to hold the strawberries but switched to whipped cream when the custard didn't work out.
Paul Hollywood: 'They're quite attractive. I quite like what you've done with the strawberries on the top of the glaze. A bit uneven. Probably needed a little bit longer in the oven. They're a little pale for a volume. It never happened, I take it. Never happened. So what we've got here is creme shanti. It's just whipped cream. Just strawberries and cream. This is really still raw inside.' Prue Leith: 'It's a bit boring because all there is cream and strawberry and a pretty dry olive on. It's a shame, actually. The creme pat would have worked if you put cream with it.'
