Signature challenge: 30 identical American-style cookies in two hours, any flavor, with an appropriate decorative finish, crisp to the bite with a chewy center. 


Back in the tent after having to leave through illness in week one, Shannon based her cookies on her late nan, whose one wish was to go to Wimbledon. Her cookies have a cream cheese filling and a dough marbled with strawberry jam. 


{Shannon}: "I absolutely love a biscuit. Being British, being a tea lover, it's in our blood." 


{Shannon}: "It's based on my nan, bless her. Before she passed away, all she wanted to do was go to Wimbledon. So I thought, I'll bake some cookies. Strawberry cream, center court dreams." 


Nigella noted it was quite a wet mixture. {Shannon}: "But you want them to be really gooey and textury in your mouth. It just works really well." 


{Shannon, presenting to judges}: "So what I've got is a strawberry and cream cookie with a cheesecake center."

{Paul Hollywood}: "Massively underbaked, straight away." {Nigella Lawson}: "It's a pity, because the flavor's good. I like the strawberry coming through. I think maybe you've spent a bit too much time thinking about the adornment than the chemistry, if you like." [Paul's 'I like the look of it. Nice strong color on the base' and Nigella's 'Pretty, like a flower' follow straight on in the transcript. They sit better with Mo's cookies and are placed in his row.]
