Apricot, Pistachio, and Mint Stuffed Chicken Thigh Ballotine with Makhani Gravy, Olive and Caper Tapenade.
{Dhananjai}: "It's going to be a ballotine of chicken leg that's stuffed with apricots, pistachio, and mint, and that's going to be wrapped with ribbons of chives, along with a creamy makhani tomato gravy topped with olive and caper tapenade."
{Dhananjai}: "This dish is taking inspiration from a restaurant that me and my family loved all through childhood. And it's that memory that I'm trying to recreate for the judges."
{Dhananjai}: "Today we have chicken thigh ballotine stuffed with apricots, pistachios, and mint salsa verde with a makhani gravy, which is a creamy tomato based gravy, along with a tapenade of olives and capers. Please enjoy. Thank you. My pleasure."
{Dhananjai}: "Pretty famished at this moment. That was excruciatingly difficult to pull off. Definitely like the same kind of intensity of a Saturday night service."
{Jimi Famurewa}: "There's parts of this dish that I really enjoy. The salsa verde has real punch and chilli in it. The tapenade is kind of there."
{William Sitwell}: "There's power in the makhani sauce. There's heat in that. He's able to produce a very vibrant, colorful plate of food. He's very clearly a really good cook."
{Jay Rayner}: "There are lots of really lovely flavors in here, particularly the apricot. The sweet nuttiness coming through. But a central thing which is that piece of chicken just looked a bit pale and unattractive."
{Marcus}: "Could do with just a little more searing because some of the skin is chewy and fatty in part. I hope theirs is better cooked than ours."
{Monica}: "I love the heat of that sauce. It's absolutely fabulous. I like the capers that he deep fried on top and the olives. But again, he was running out of time. You know, two fabulous dishes, but both of them were late."
