Gordon Ramsay: "Maria, a whole lamb shank in a pressure cooker. How long do you cook it in there for?"
Maria: "Thirty five minutes."
Maria: "So much could have gone wrong, but I got the top dish. I am feeling amazing. This is a Nigerian and Brazilian fusion dish, and I made suya spice lamb shank with yuca mash."
Maria: "I won the immunity pin. I cannot believe it. I am the first person to win the immunity pin for the Americas, and I am saving my team today, and I am so excited."
Tiffany Derry (during the cook): "From team Americas, Maria is doing this lamb shank that has suya spices. In an hour. She is making sure the Brazilian culture and flavors are still in there with Nigerian flavors. She is very comfortable."
Gordon Ramsay (during the cook): "I love that. But that is a lot to do in sixty minutes."
Gordon Ramsay: "It is beautiful. You can just see from the naked eye that it is caramelized beautifully."
Gordon Ramsay: "The lamb is cooked beautifully. It is sticky, it is rich, it is tender. This is exceptional."
Tiffany Derry: "I love the suya. It popped. It has got some spices in there. With the chilies, you are not trying to mask the flavor of lamb. You are adding to the flavor of the lamb. And this is a dish that feels like you, but still embracing the challenge."
Joe Bastianich: "It came out perfect. Like the reduction, the stickiness of the sauce, the flavor of the lamb. You took one of the biggest risks, and you nailed it."
Result: Best dish of the night. Winner of the immunity pin, keeping team Americas safe from elimination.
