[Signature challenge: baked cheesecake inspired by a family favorite, baked with a relative]
Gary and his sister Paula made a classic New York-style cheesecake topped with a sweet cherry compote "lake" and swan decorations made from melted sweets, inspired by the swan-filled lakes near Gary's home.
Gary: "This is my lovely sister Paula."
Gary: "Well, where I live we've got a couple of lakes. It's full of swans and Paula came up with the idea. A cheesecake that looks like a lake with some swans floating."
{Paula}: "I'm making some swans. Yes, these are feathers. So simple, this. So simple, a swan."
{Paula}: "Everybody says I'm artistic, but we'll see."
{Gary}: "It's all about the cooling time."
{Gary}: "You don't want it in the fridge 'cause it'll shock it and it will just crack."
{Paula}: "Swans, swimming away."
Nigella: "Amazing."
Paul: "Beautiful. I mean, it's handy that they are swans, because there's so much liquid there. Probably a little bit too much."
Nigella: "It's very delicate. I think I could do with a bit more tang."
Paul: "I think the setting, I think the base, the bake, it's all a big tick, and the swans are incredible."
Nigella: "I want swans on everything I eat from now on. I'm going to see if I can copy it."
