Sweden a Favod – Braised Ox Tongue under a Steamed Swede Blanket with Pea and Leek Fricassee, Toasted Swede Puree and Dark Chocolate Shavings, with a Port, Beef and Chocolate Sauce.
Welshman Daniel is an actor, writer and vintage car builder whose cooking revolves around Welsh cuisine. "Sweden a Favod" is Welsh for swede and tongue. Daniel: "My signature dish is Sweden a Favod, which is Welsh for swede and tongue. It's going to be braised tongue underneath a swede blanket with pea fricassee and a toasted, pureed swede mousse or spooner over the top, and some grated chocolate." Daniel: "My wife has told me I absolutely can't call it 'Tongue under the blanket.' I think this might be a risky dish. It depends how they are with offal. Tongue is kind of looked down on, but I love it." Pre-cook brief: tongue is divisive — the trick is to cook it so it's soft and yielding and doesn't remind the eater what it is.
John Torode: "For me, the braised tongue is soft, it's juicy. There's a great depth of flavour with the beef and chocolate sauce. That is quite delicious. The chocolate shavings on top of the swede puree, for me, does not work. Too bitter, too jarring and too dominant." Grace Dent: "Love the swede foam. Earthy and sweet. Your swede blanket has got good texture. I'm not 100 percent sold on tongue. To me, it's quite gelatinous in the mouth."
