Sweet Corn Husk Ice Cream Sandwich with Sweet Corn Caramel and Polenta Biscuits
Ciaran builds an ice cream sandwich entirely around corn. He makes a corn-husk-infused ice cream base with egg yolks and sugar, and reduces a sweet corn caramel on the side. A brown butter polenta biscuit dough (white polenta, brown butter) is baked into thin, crisp squares. The churned corn husk ice cream is piped between two polenta biscuits with a layer of the sweet corn caramel in the centre, then the whole sandwich is rolled in a popcorn dust made from blended roasted popcorn, and firmed up in the blast freezer.
Ciaran: "The title is popcorn and ice cream. The two things you get offered at the cinema."
Ciaran: "I'm making a corn husk ice cream. And then I'm going to turn it into an ice cream sandwich. A white polenta biscuit. So corn again, either side."
Ciaran: "We're just making a brown butter biscuit."
VETERAN ROUND (Simon Rogan, blind tasting): Andi: "This one is like a corn infused ice cream sandwich."
Simon: "That's nice as well."
Jeffrey: "Delicious."
Mark: "Nice acidity."
Jeffrey: "Yeah, it takes it through it."
Simon: "Three good ones."
Andi: "Slightly sweeter, that one."
Simon: "Slightly sweeter. Bit more filling. Probably a little bit on the big side." Simon ranked it first overall of the three pre-desserts and correctly identified it as Ciaran's.
JUDGING ROUND (Tom Kerridge, Lorna McNee, Phil Wang, guest Ben Whitehead): Mark (walking the dish in): "I love that."
Phil Wang: "Amazing."
Tom Kerridge: "Biscuit is great. The corn caramel in the middle is absolutely delicious."
Phil Wang: "And that corn ice cream is so good." Lorna McNee: "The biscuit's divine."
Ben Whitehead (guest): "This is one of the nicest things I've ever eaten in my entire life. This is amazing. I don't want to finish eating it. It's so good." Ben Whitehead: "Unbeatable."
