Sweet Potato Dumpling, Leche de Tigre
Sweet Potato Dumpling, Leche de Tigre

Country: Peru.

Round: Dumpling.

Katie: "This is my dumpling course. This is Peru, and it's a sweet potato dumpling with a sauce inspired by leche de tigre."

Katie (context): "One of my favorite Peruvian dishes is leche de tigre, which is ceviche with this sauce that's thickened by blending raw fish into the lime juice. I'm going to make some dough out of sweet potato and then do, like, a drop dumpling. I haven't cooked Peruvian food. I've never made a dumpling, and I have to trust my gut." Katie served last and was concerned the larger dumplings weren't fully cooked through.

Kwame: "I love the flavor of the leche de tigre, but I'm a little confused of just the complete composition of the dish."

Padma: "The dumpling itself eats very gummy. I do think out of all the dumplings we've had, this is the least successful dumpling for me."

Score: 73/120 — last place in the dumpling round.
