Ferdinando's quarter-final main: handmade tagliatelle tossed in a roasted yellow tomato and nduja sauce, finished with burrata and chilli oil. Ferdinando rolled the pasta on a pasta machine, the red colour coming naturally from the nduya, like a vision of a volcano. He learned to make pasta with his grandmother. The judges warned that rolling the pasta too thick would make it claggy and lumpy.
Tony Rodd: this is not like Nonna used to make; the pasta is awful - really thick, still floury, not quite cooked properly; the sauce just coats the pasta. Simon Wood: the only saving grace might be the burrata with those roasted tomatoes; overall the pasta is not very good. John: not a balanced dish.
Anna: lovely ideas and great flavour profiles, but even she can't finish the bowl - and pasta is one of her favourite hobbies.
Ferdinando is eliminated.
