Tamal Dulce with Mole de Rosas (Rose Petal Mole) & Whipped Horchata Cream
Diana's 'good' dessert — the only plate she finished. Diana: "In the molcajete, I have here my rose petals. Making a mole de rosas. With Mexican food, one of my favorite desserts is a sweet tamal. I love horchata. So for my good dessert, I'm also making a horchata pudding. In this competition, I overthink everything, and all of a sudden, I realize that I am so not in a good place." On presentation: "For my good dessert, I made a tamal dulce with muddled mole of rose petals with a little whipped horchata."
Michael Cimarusti: "Doesn't matter what the challenge is — you find a way to express your culture and the flavors that are most dear to you. The horchata cream that you made is absolutely delicious. But it's very easy to go a bit too far with the flavor of rose. And for me, unfortunately, I think in this dessert, you've done that." Nina Métayer (guest): "I love Mexico. I lived there for one year, and you bring me all the flavor I love from Mexico. For me, the mole is very balanced." Wylie Dufresne: "Every time you give us ingredients that I'm totally familiar with, you could deliver them to me in a way that I've never had before — and that's the sign of a great chef. And when I say this last thing, I mean it as the highest compliment: this is, like, the best Twinkie I ever had. The cream, the cake, the shape was fantastic." Padma Lakshmi: "Horchata is one of my favorite drinks, and I love how you got it on the plate in that cream. But I'm sorry I didn't get to taste your evil dessert." Note: with only one plate served, Diana was eliminated.
