Tasha's Fig, Honey and Rosemary Crème Caramels

Tasha: "I'm using rosemary that I brought from home, from my mum's garden."
Paul Hollywood: "Rosemary's an interesting one because if you go slightly over, it becomes medicinal."
Voice Over: "Tasha's rosemary-infused custard will be sandwiched between a honey caramel and fig compote."
Tasha: "I'm doing a cheats way for caramel because I'm just literally using honey. I'm just heating the honey until it's reduced."
Paul Hollywood: "They look really interesting. I was worried about you making caramel with honey. Could it have been a little bit thicker?"
Prue Leith: "There's a swimming pool of sweetness. It needs to be on the top, really. Still, that custard has a beautiful set."
Paul Hollywood: "Smooth as anything. The fig comes through. The rosemary's barely there, but the flavor is lacking a little bit of direction."
Prue Leith: "I think using honey is such a lovely idea, but everything is too sweet."
