Techniques: Dehydration, Gelification, Foam, Compression (4 techniques). Matt Peters: This is tempura, fried anchovy, Caesar salad. Dehydration of the kale, jellification of the tahini Caesar dressing, the foam of the tempura with the anchovy, and the compression of the tomatoes. Matt was fourth overall at halftime.
