A Texas chili built from beef that was cured and then ground into the pot itself, topped with slices of marinated, smoked, and seared picanha - a combination of Texas chili and chile Colorado intended as a tribute to Michael's heritage. Michael: "Texas chili for you here." Michael: "Made for you guys a little Texas chili. I wanted to honour my heritage, so Texas chili and chile Colorado kind of combined together." Padma: "What are the two ways you cooked the beef?" Michael: "The beef was cured and then ground into the chili itself and then marinated, smoked, seared, and sliced."

Wiley Dufresne: "For you guys, the chili was a standout." Padma: "You keep cooking like that chili, you'll go far." 


Michael Cimarusti: "[It'll] take you so far."
