[Signature challenge: baked cheesecake inspired by a family favorite, baked with a relative]

Shannon and her mum Tammy made "The Naughty Bailey", named after the family dog who once drank a glass of Irish cream at Christmas: a ginger biscuit base topped with an Irish cream and white chocolate baked cheesecake, a salted dark chocolate ganache and Irish cream salted truffles.

Shannon: "This is my mom."

Shannon: "We are making the Naughty Bailey, named after our dog Bailey. One Christmas, we had a little glass of Baileys by the sofa and she may have accidentally drunk some of it. And it's just been a funny story ever since. She's absolutely fine. Do not worry. She actually died now, but she had a long life. She was fine."

Shannon: "Salted dark chocolate ganache. And then we've got little Irish cream salted truffles."

Shannon: "This is the ginger snap biscuits."

Shannon: "Irish cream and white chocolate. No, we don't want too much, 'cause it'll take away the taste of the Irish cream."

Shannon: "And now we're on to ganache. So whatever we do, do not forget the salt."

Shannon: "Ganache her up, baby."

Shannon: "We know you like ginger, so we put a little bit extra on."

Shannon: "I'll pull it together for the technical."

Paul (during the bake): "It's actually one of my favorite cheesecakes."

Nigella: "It looks splendid."

Paul: "I think it does look very good."

Nigella: "Wow. Your chocolate ganache is very intense. Dare I say it, might you have put a bit too much salt?"

Paul: "Can't even taste the Baileys, really. I just don't like it at all."

Nigella: "Don't look so despondent. Use it to go forward and not do it again."
