Tiger Prawn and Purple Napa Cabbage Bisque with a Tortilla Pressed Prawn Cracker. 


In this challenge, the randomizer selected the following conditions that had to be met by each chef:


Protein: Tiger prawns 

Produce: Purple napa cabbage

Style: Date night dinner 

Wild card: Soybean curls


Voiceover: "What is date night without high drama? This is tiger prawn and purple napa cabbage bisque with a tortilla pressed prawn cracker. The tiger prawns were fabricated and then pressed into rice paper that was then fried, treated to smoked paprika and gochugaru. A sofrito of sorts was made of purple napa cabbage, gochujang, scallion, ginger, lime leaf cream, and soy curls, then garnished with hydrated soy curls. Purple napa cabbage was also grilled and pickled in a light dressing of Meyer lemon juice and rice wine vinegar." 


Jonathan Sawyer: "I'm gonna do a delicious prawn soup. Real deep, rich flavors. And then I'm going to do this cool little prawn cracker." 


Jonathan Sawyer: "I'm gonna fry these prawn heads really quick, get some color on them, and start that stock. This soup has gotta be deep in flavor, fortified from shellfish stock and roasted prawn heads." 


Jonathan Sawyer: "I've never used soybean curls before. I'm gonna blanch them and then marinate them heavily with Meyer lemon, scallions, grated ginger, and soy sauce. That's gonna intensify the soyness of them. I'm not trying to hide them, just trying to make them a little bit more interesting. Putting some soy curls into the soup will also help thicken it." 


Jonathan Sawyer: "I press one of these big prawns into a piece of rice paper, keeping the tail out because that's what's gonna hold it in place. It's like the fanciest shrimp chip you could imagine." 


Jonathan Sawyer: "This soup is super rich and it's gonna need some acid. That's why I'm grilling my purple napa cabbage and pickling it in a combination of rice wine vinegar, Meyer lemon juice, and yuzu juice." 


Jonathan Sawyer: "On the top of the plate I have my prawn rice cracker, some grilled and pickled purple napa cabbage. I go down with the purple cabbage prawn bisque, perfectly cooked prawn pieces, then the purple napa cabbage, and then a little bit of the soy curls on top."

Geoffrey Zakarian: "This idea of this crisp is really a spectacular idea. And the soup underneath is spectacular as well. Unfortunately, it suffers from the fact that the prawn is really overcooked." Michelle Bernstein: "Anytime you put a skirt on something, it makes me happy. This chef put a beautiful gown on that prawn and made it so elegant. I agree with Jeffrey that the prawn could be a little less cooked, but it's not bothering me. This is a really lush sauce. I could use a little more heat in this one. It is delicious, and I keep diving in for more." Kenny Oringer: "It is such complete artistry, the pounding with the tortilla press. These condiments are so acidic. The napa cabbage is great. And the soy curls are actually not bad at all." Final score: 85. Winner.
