A technical reinvention of the Italian classic. Mascarpone panna cotta and a coffee-chocolate cremeux are built into five alternating layers, each fully set before the next is added, then frozen inside a thin chocolate shell lined with mascarpone cream. The assembled log is unmoulded and served with an amaretto-soaked cherry and an amaretto cherry sorbet. Luke's goal was to preserve the essence of tiramisu through precision engineering: each layer carrying a distinct note of coffee, chocolate or cream while the overall result remains cohesive and recognisable.
{Judge}: The chocolate log praised for capturing the very essence of a great tiramisu. Coffee perfectly pitched, the mascarpone beautifully set. The favour inside that little chocolate log is the best tiramisu is all about. {Judge}: The amaretto cherry sorbet called a delicious addition, very reminiscent of black forest in its combination of chocolate and cherry. A very delicious and well executed dessert. {Judge}: Wished there had been more of the single amaretto cherry. However, nothing here not to enjoy.
