Vegetarian Tofu Chili with Flatbread, Guacamole, Pico de Gallo and Parmesan Crisp
Narrator: "Finally, singer Jay is hoping to impress with his vegetarian tofu chili, flatbread, guacamole, Mexican salsa, pico de gallo and a parmesan crisp."
Jay: "Want to see my dough? Yeah, we're on the rise. Apart from it shouldn't rise."
Jay: "Let these veggies stew in there and soften up."
Jay: "When I was at school at the age of 13, I decided, okay, I'm doing it. I've got a big, dark secret, and I need to get in the car after school and tell my mum the truth about me. I'm vegetarian. She was very understanding."
Jay: "Tofu is quite flavorless. The beans will do a lot of the work, but I just really want that to be brown."
Jay: "Normally, when I'd be cooking, there's music, wine, hours and hours, no judgment."
Jay: "So I'm making a vegetarian chili with tofu, flatbread and parmesan crisp."
Jay: "I mean, I was honestly fine until you came up."
Jay: "There are components in this that I would never normally do. Flatbread and parmesan crisp. That's just so you guys have texture."
Jay: "I just need more time to percolate on that."
Jay: "Okay, let's go. I'm gonna make my flatbread. More butter, more better."
Jay: "We're going with rustic."
Jay: "Oh, no. The parmesan crisp I should have done a long time ago. Okay, okay, I can do this."
Jay: "I really did want to get that slop a little bit more vertical."
Jay: "This is our tofu chili with rice, guacamole, pico de gallo, and some flatbreads for your enjoyment."
Jay: "I feel great. I know where I've got work to do, and I know I had some successes, and that's a really good start."
Jay: "Like everyone, there's stuff I know I need to work on."
During the cook:
Giorgio Locatelli: "You look a bit flustered, Jay."
Grace Dent: "You dance, you write books, you sing. Why are you so nervous?"
Giorgio Locatelli: "We won't judge you. We will judge the dish. So you're taking care of the flavor, the texture. What about the presentation?"
Grace Dent: "The one thing we don't have in the MasterChef kitchen ever is time. It's gonna have to start happening."
Grace Dent: "I really love it when people make flatbread."
Giorgio Locatelli: "It's always very easy to serve it not cooked enough. That's one of the mistakes that a lot of people make. The presentation will be very important, how he puts it together. I hope he just relaxes a little bit."
Verdict:
Grace Dent: "Jay, your presentation is fabulous."
Giorgio Locatelli: "The rice is cooked perfectly. You managed to cook the tofu to a really nice crispiness. I love that little salsa that you made. It's really nice and chili. Seasoning, perfect."
Grace Dent: "And then there's this lovely little parmesan crisp. It's a real flavor bomb of cheese. Do you know what the missing ingredient is? Confidence. Because you carried the food over as if it was your time to go home already."
Grace Dent: "Did you just call it slop? You're not the greatest salesman in the world."
Giorgio Locatelli: "Let's go back one minute. Think about that. You are a waiter, so how would you sell this? I want you to walk back in a completely different way."
Giorgio Locatelli: "We say the first impression counts. You left a very good impression on me."
Deliberation:
Grace Dent: "Jay wasn't taking many risks, but I loved that little parmesan crisp."
Giorgio Locatelli: "He really needs to believe in himself if he wants to get on with this."
