Tom Davis drew on his tradesman background and love of a full cooked breakfast for his signature bake: sausage-filled rough puff pastry topped with hot honey and enriched with a cheesy bechamel sauce. 


{Tom}: "When you're working on a building site, most of your life is a big breakfast in the morning. Massive fry up. And this is in honor of a good breakfast." 


Some pastries were presented with a full pastry lid while others were left open-topped. Narrator: "Tom's planning to elevate a meat filled classic. He'll top his sausages with hot honey and add a cheesy bechamel sauce." The sausage, honey and cheese sauce combination drew strong approval from the judges.

{Cherish}: "Why is it some with pastry lid on and some without hat on?" Tom explained that not all could afford a hat. 


{Paul}: "I love the taste and you do have lamination. You've lost a little bit of the butter in the oven which makes it quite dry." 


{Cherish}: "I think overall the taste profile is quite nice. However, I think the puff pastry is actually very dense." The tasting ended with enthusiastic approval: "Sausage all day long."
