Tortelli Pasta with Parmesan Cream
Coming back into the kitchen after her frangipan mistake, Georgia chose tortelli pasta. She said: 'I'm going to do tortelli pasta. I'm making homemade ricotta to go inside with a little bit of feta, lots of herbs, parmesan. Then I'm planning on a courgette and pine nut pesto and roasted tomatoes. All the sort of flavours from Italy that I love.' She confirmed she had spent many years working in Italy, which made her feel comfortable. The judges noted she was making her own ricotta by adding lemon juice to full fat milk and straining it through, and that all her pasta shapes needed to be uniform. Georgia acknowledged her hands were shaking, making the fiddly tortelli shapes harder to produce.
Tortelli Pasta with Homemade Ricotta, Feta and Herbs, Courgette Pesto, Yellow Courgette, Roasted Cherry Tomatoes, Parmesan Crisps, and Parmesan Cream. 'Your tortelli parcels are all uniform, all perfectly made. The filling of the ricotta is smooth and delightful. Even the detail of the tomatoes, which you've oven baked as you would get in Italy. Well done for coming back with great determination to deliver a good plate of food.' 'I love this little pesto that's got a courgette base to it. It's quite nice not to have just your classic pesto, but also the little dots of courgette around the plate. It's sort of like that Mediterranean dish that's just all dancing. This is really good.' 'I'm particularly loving the parmesan cream. It's setting my mouth on fire. It's packed full of parmesan. It's rich. This is a very kind of light, summery dish, but it's not lacking in any depth of flavour at all.' Georgia said: 'I'm so relieved. I feel quite emotional. That's what I wanted to show, that I'm so much better than what I did in the previous cook.' Georgia progressed to the next round.
