{Rahul}: "One, I did have a long conversation with mum about samosas. She's in India and she made a samosa last night. She sent me the pictures of samosa." Rahul relies on his mother's guidance, using a North Indian samosa technique with ridged pattern folding.
Paul Hollywood : "I think the pastry is perfect, actually. And the texture because you've got the bite in there as well."
Paul: "Great flavors. What it is the texture. You got the feel, the flavors, the spices. And that with the raita as well, it's that cooling effect, the whole thing together. Because the pastry is beautifully crispy, it almost melts in the mouth."
