Matt's starter: a chawanmushi (a soft, just-set savoury egg custard) flavoured with bacon and topped with a barbecued scallop; rice with a green tea dashi poured over and a barbecue-glazed crispy-skinned salmon; and a lightly cured mackerel maki rolled in nori with chives and shiso.
Matt: "For my starter, I'm making, like, a little trio of truly Japanese dishes. They're three of my favourite things to eat." He wanted the custard gently set for a luxurious texture, the scallop just smoky from the barbecue (not burnt), only a tiny amount of salmon over the dashi-soaked rice, and the pickle to enhance rather than overcook the oily mackerel.
Grace Dent: "Your mackerel was very lovely... the highlight for me is the salmon with the crispy skin and then the green tea dashi with the rice, which is just cooked correctly. I really liked it."
