Deborah created a modern twist on traditional trifle using lemon Swiss roll with homemade lemon curd, orange and mango flavors, and orange liqueur applied with a garden spray bottle. She sliced the Swiss roll to show spiral patterns through the glass bowl. During the challenge, she accidentally used Howard's custard instead of her own, creating a memorable moment of 'baking espionage.' Her version featured cornflour in the custard unlike Howard's traditional method.

Mary Berry noted the custard was far too slack and that there was no definition in the layers, appearing more liquid than Howard's version. Paul Hollywood said all the flavors blended well together but he didn't like the skin on the apple. Mary concluded that while Howard's custard was better, Deborah's still needed more cooking and would have layer definition problems regardless. Deborah acknowledged she might eventually make something completely good rather than partially successful.
