Tuna Crudo, Date & Onion Sauce

Tuna Crudo with Caramelized Date and Onion Sauce (a play on the Persian dish Khoresh-e Khorma) 


Chris: "I'm toasting some coriander seeds, and I'm going to make my tahini with eight seeds sauce, which adds a little bit of sweetness, traditionally as a base for a crudo for a tuna." 


Chris: "My cold dish is a bigger risk. I've never done this preparation of sauce alongside raw seafood before. This is either going to hit or it's going to sink me." 


Chris (presenting): "My cold dish is a tuna crudo. This is a play on an Iranian dish called khoresh-e khorma. Khorma — there's a word in Farsi for dates. So it's a sauce of caramelized red onion, garlic and dates to be poured over top."

Padma: "I mean, I've never had sliced raw tuna bathed in this kind of sauce, but I have to say, I really like it. With your cold dish, you really hit the nail on the head. So congratulations." 


Michael: "I like this tuna dish a lot, Chris. I like the fact there's a little floral element that you put into the sauce. So that was really quite nice. In some way, this sauce reminded me of French dressing."
