Venison Loin with Stilton Blue Cheese Crust, Pickled Beetroot, Fresh Berries and Figs, Venison Jus with Port and Balsamic, and Blue Cheese Sabayon


Patrick cooked a venison loin with a Stilton blue cheese crust, a dish he first developed as an 18-year-old apprentice for a cooking competition where he did quite well, and which sparked his passion for food. He wanted to reinvent it to show the levels and skill he has learned over the years. 


{Patrick}: 'It is a dish that I worked on when I was an apprentice, entered into a competition which I ended up doing quite well in. As a young 18-year-old, it really sparked my passion for food and for cooking. And I am trying to reinvent it, trying to show the levels and the skill that I have kind of learnt over the years.' He served the venison with pickled beetroot, fresh berries and figs for sweetness, a venison jus finished with port and balsamic vinegar, and a blue cheese sabayon. The venison loin had zero fat on it, requiring very careful cooking to keep it pink in the middle. He finished with a blue cheese crust on top for added texture. 


{Patrick}: 'I have only got one more shot. I have got to prove to the judges that I have got what it takes.' Having come back from a difficult skills test, Patrick showed a completely transformed confidence and composure. 


{Patrick}: 'When Chef Marcus mentioned that about the blue cheese, my heart sunk. I thought no, I have done it again. And yeah, to ultimately win him over and for him to enjoy the plate of food is yeah, very rewarding.'

{Matt}: 'Lovely presentation. It is like a work of art. Venison cooking, it is spot on. The saltiness of that blue cheese crumb is seasoning this venison. Very clever. The beetroot, the berries, the fig works really well with this.' 


{Marcus}: 'The venison sauce with the beetroot, that balsamic vinegar in there, bit of port. It is very good. Nice consistency. And the blue cheese sabayon, it is great. Absolutely delicious. Very good.' 


{Monica}: 'I hate blue cheese. I can not deal with it, the smell, as a flavour, but I absolutely love this. I am so pleased Patrick, you have come back into this kitchen and really shown us who you are. Delicious plate of food.' 


Deliberation: {Marcus}: 'Patrick, what a difference from the skills test. The cookery of the venison was very good, and I love the little fruit garnish.' 


{Monica}: 'And he won me over with the blue cheese crust and then the little sabayon that went on top of that beautiful venison sauce. He absolutely nailed it.' 


{Matt}: 'Great attitude to dust himself off and come back fighting.' 


RESULT: Quarter-finalist.
