Who made this dish?
Part of Gabe's "full camp 70s" trolley on a little golden trolley, inspired by his favorite book, Nigel Slater's Toast. Walnut gateau with dark chocolate ganache, made with a joconde sponge. Gabe: "Bringing out a gorgeous selection of puds on a little golden trolley. It is the camp thing." Gabe: "The whole thing is inspired by my favorite book, which is Nigel Slater's Toast. And honestly, it actually changed my life. So I'm doing full camp 70s." Gabe: "I had a dream that Paul was just standing next to me and he was just going, it's overworked. He'll haunt me for half my life." Gabe: "This is my joconde sponge." Gabe: "So we have a walnut gateau."
[Showstopper: a retro dessert trolley of at least three individually portioned desserts, eight of each, with at least one baked element. 4 hours 30 minutes.] Nigella (at the bench, on the theme): "You're singing my song." Paul: "Texturally, it's not right. Soggy sponge." Nigella: "It's because it's in a small thing, it makes the nuts go a bit mealy."
