Wattle Seed and Beer Battered Cod with Fried Plantain, Ata Dindin Sauce and Yaji Spiced Tartare Joe Bastianich: "How are things going down under? What do you think about getting Australia?" Peter: "Australia uses a lot of fish and chips and beer, so I wanted to do a beer battered cod for the fish, and I will have fried plantain for my Nigeria culture, as well as an ata dindin sauce." Joe Bastianich: "You have made fish and chips before?" Peter: "No, I have not. And I know Chef Ramsay is going to be very particular, so." Joe Bastianich: "Yeah, that is going to be interesting, to get his take on it. It has to be cooked, has to be moist enough and not dry, yes?" Peter: "Yes." Peter: "Taking this one out. Did not have the right batter consistency, but these should be better. Hopefully my day depends on these." Tiffany Derry: "Hey, Peter, what is this sauce right here?" Peter: "This is an ata dindin sauce." Tiffany Derry: "What kind of fish did you use?" Peter: "I did a cod." Peter: "I could pass out. I am so happy. I am ready to show the judges that I am supposed to be here and I am here to win. Today, I made a wattle seed and beer battered cod with plantain, ata dindin sauce and a yaji spiced tartare sauce."
Tiffany Derry: "I love the fact that you stuck to your roots of Nigeria, but still embracing the fish and chips with the Australian influence. It looks beautiful. Very inviting." Gordon Ramsay: "Listen, fish is cooked beautifully, and the plantain could have been a touch crispier. Big deal. But the pepper sauce, absolutely spot on." Tiffany Derry: "I love the different texture that you get with the plantains after it just seeps up all of the peppers. Very delicious." Joe Bastianich: "Quite frankly, Peter, I am shocked that you made this. It is kind of incredible. I am gonna just tell it the way it is. I did not know you were capable of cooking like this. Quite frankly, I appreciate it." Gordon Ramsay: "Great job, young man. Well done." Result: Top four dish of the night, best dish for team Africa.
