[Signature challenge: baked cheesecake inspired by a family favorite, baked with a relative] 

Tom and his partner Alex made a New York-style cheesecake with an almond shortbread base, white chocolate filling and raspberry topping, built around Alex's favorite flavors. 

{Tom}: "It's the curse of the Star Baker. So I'm just trying not to go home this week. I'm trying to play it safe." 

Tom: "I'm making an almondy shortbread base, so it should complement the raspberry and white chocolate really well." 

Tom: "He's done so much already. I allowed him to weigh out some ingredients. He's going to have more things to do." 

{Tom}: "And that's 250ml." 

{Tom}: "Just spill out everywhere if it's not set properly."
