Eniko

Eniko is a 37-year-old private chef from Hungary, living in Norfolk. She has a strong background in Eastern European cuisine, which includes various filled pastas and dumplings. She recognised the need to cool her filling first, showing solid instinct. However, she diced her mushrooms too large, risking burst wrappers. Her filling lacked the depth of flavour Philli's version had — she used mainly onions, garlic, and mushrooms, missing the opportunity to layer in gochugaru, ginger, and sesame oil. She used the pasta machine to roll her dough, which was acceptable, but cut her wrappers very small, making it difficult to get sufficient filling inside. Her dipping sauce was vinegar-forward, which Philli actually praised for offsetting the dumpling flavours. The overall result was undersized, under-flavoured dumplings — put down to first-time kitchen nerves.
