Mark

From just outside Dundee, Mark was late to chef life. Starting at 27, he now heads up the kitchen at veteran chef Simon Rogan's Henrock in the Lake District, serving intricate plates of food with international influences.


Mark; 'I love cooking with seasonal ingredients. I love homegrown produce and I love the challenge of making dishes out of what we have rather than what we can get. And that's really at the heart of everything that I love to do. My style tends to be a little all over the place in terms of traditional methods. So I feel like I've ended up with a nice balance between thinking in and outside the box. Representing Scotland on great British menu is kind of a twofold thing. It is always an honour the other side of it, which is terror, because Scotland has some incredible chefs."
