Galette des rois is a French puff pastry cake that is traditionally eaten in France on January 6th (Epiphany) to celebrate the arrival of the Three Wise Men in Bethlehem. The cake is usually filled with frangipane, a cream made from almonds, butter, eggs, and sugar, and contains a small charm, or fève, hidden inside. After cutting, whoever gets the fève wins a prize or gets to wear the crown, since they are king or queen for the day.
The judges were looking for a smooth almond frangipane, encased by a flaky puff pastry, scalloped at the edges and highly decorated.
