
Set by guest judge Cherish Finden, the technical challenge asked the bakers to produce a classic tarte tatin: caramelised apples, a cheat's rough puff pastry, served upside down with Chantilly cream. For most, it was entirely uncharted territory. The caramel proved the first hurdle, with crystallisation catching out more than one baker, while the laminated pastry demanded cool hands and patience neither the clock nor the tent temperature were willing to provide. Judged blind, the results were ranked from fourth to first - Richard's dense, under-laminated pastry placing last, Babatunde third despite good apple flavour, and Molly-Mae a solid second, just shy of enough oven time. First place went to an astonished Jojo Siwa, whose flavour profile and visible lamination impressed Cherish most of all.
