Technical Challenge: Vegan Matcha Sandwich Biscuits
This was set by Cherish Finden, the patisserie judge, and it was deliberately exacting. The bakers were asked to produce ten flower-shaped vegan matcha sandwich biscuits, filled with a yuzu ganache and decorated with a rice paper flower on top of each one.
