Duck and Plum Sauce

{Judge}: Admired for carrying the spices and fruit of the braised legs through to the finished sauce. A hint of soy noted. Works beautifully with both the duck breast and the croquette. {Judge}: No waste, and I love that.

Built entirely from the braising liquor of the spiced duck legs, this is a no-waste sauce that carries the fruit, spice and soy notes of the braising base in concentrated form. As the legs cook with star anise, lemongrass, ginger and plums, the liquid develops complexity. Reduced and finished, it amplifies and echoes the flavours already present in the dish rather than introducing new ones, tying the main course together with economy and depth.
