Sherry's red cabbage was braised with elderberry, deepening both the colour and adding a tart, floral berry note to the classic German-style preparation. Braised red cabbage is one of the most reliable and forgiving sides in the home cook's repertoire: it improves with time, reheats perfectly, and keeps for several days. Elderberry syrup or elderberry vinegar can be used in place of fresh elderberries; both will contribute colour and acidity. A small amount of apple or red wine vinegar is essential to prevent the cabbage from turning blue-grey during cooking.
