{Judge}: I really love the texture from the soup. I think it's a stunner, really. I like it a lot.

A traditional Ghanaian peppery fish broth made with whole peppers, aromatics, and fish stock, served as the liquid element of the dish alongside the snapper, fufu, and okra salsa. 


Light soup is characteristically thin and intensely flavored - hotter and more aromatic than it appears - made by boiling whole Scotch bonnet or bird's eye chilies with tomato, onion, and ginger into a clear, deeply seasoned broth. 


Nana described the reference: my auntie prides herself on making one of the spiciest soups ever - your nose is running but it's so good you keep going back for more. The judges praised the texture and flavor of the soup, though unevenly cooked fish overshadowed it at judging.
