Marbled Activated Charcoal, Saffron and Pea Flower Pasta Dough.
Brandon made three separate pasta doughs - one coloured with activated charcoal for black, one with saffron for gold, one with pea flower for green - then laminated them together before rolling to create a marbled sheet. Judges called it a piece of art. The technique mirrors traditional tricolore pasta but uses natural colourants throughout. Rolling the doughs to the same thickness before stacking is essential for clean marbling; uneven sheets produce muddy rather than distinct colour striations.
