A refined take on the classic prawn cocktail sauce, built on a mayonnaise and tomato base. Slightly caramelised langoustine shells are used to deepen the seafood flavour within the sauce, moving it beyond a simple condiment. Served around the outside of the tartare, it anchors Gareth's starter to its prawn cocktail inspiration, connecting every element back to his mother's favourite dish through flavour as much as presentation. A familiar sauce made more precise and purposeful.
