Mole Rojo

Anthony's mole rojo was coloured and flavoured with guajillo chillies and yellow beets, giving a deep brick-red tone with a slightly earthy sweetness. Guajillo is one of the workhorses of Mexican cooking, prized for its mild heat, fruity acidity and rich colour. The beet addition here served a dual purpose: natural dye and a soft underlying sweetness. Works well poured over chicken enchiladas, roasted cauliflower or grilled pork.
