Mole Verde

The lightest of Anthony's three moles, built on fresh green chillies, tomatillos, herbs and pumpkin seeds, with liquid chlorophyll added at the end to preserve and intensify the vivid green colour. Unlike its darker siblings, mole verde is a quicker sauce and benefits from finishing off heat to maintain brightness. It is an excellent companion to white fish, chicken breast, or roasted courgette, and doubles as a bold dressing for grain bowls.
