Seafood Gravy

{Judge}: Jennifer's sauce, I think, is spectacular. When you get to the center of that dish, and you take a bite of that crab, you really feel the heat. It packs up the punch. {Judge}: Kudos for the depth of flavor that you brought to the she-crab soup. That's really hard to do.
A rich, dark seafood-based gravy made with Fresno chili mash incorporated into the brown butter base, poured over the crab salad and grits. The gravy carries the primary heat of the dish, concentrating the Fresno chili spice into the sauce so that diners encounter the full heat only when they reach the centre of the bowl and take a bite of crab submerged in it - while the grits around the edge provide a mild, starchy counterpoint. The layered discovery of heat within the gravy was praised as an intentional and skillful structural choice.
