Very thinly cut potato fries, fried until crispy throughout, dusted with fine salt powder and topped with shards of crispy rendered chicken skin. Served in a deep bowl as a deliberate nod to the comfort of pub chips alongside a technically refined chicken main. Salt powder provides even, controlled seasoning across every fry. The chicken skin, rendered until shattering-crisp, reinforces the chicken and chips identity and adds a fatty, savoury crunch no standard chip can replicate.
