This is a thickened ponzu, ideal for dipping or glazing. It was inspired by watching Corwin using apple in Season 22, Episode 3 of Top Chef ™.

Instructions

In a small saucepan, combine everything except the cornstarch and water.

Bring to a gentle simmer over medium heat for 2–3 minutes.

In a small bowl, stir the cornstarch into the cold water to make a smooth paste.

Slowly whisk the cornstarch paste into the simmering sauce.

Continue to simmer and stir until the sauce thickens to your desired consistency (usually about 1–2 more minutes).

Remove from heat and let cool slightly. It’ll thicken a little more as it cools.

2 tbsp apple juice
1 tbsp apple cider vinegar
1 tbsp lemon juice (or yuzu)
1 tsp mirin (optional, for sweetness)
1/2 tsp cornstarch (cornflour)
1 tbsp cold water (to mix with cornstarch)
